What's the difference between Grade A and Grade B vanilla beans?

Grade A (Gourmet Grade):

  • Moisture content: 30-35%
  • Appearance: Dark, oily, pliable, beautiful
  • Best for: Culinary use where appearance matters (ice cream, custards, crème brûlée)
  • Price: Higher

Grade B (Extract Grade):

  • Moisture content: 15-25%
  • Appearance: Drier, may have splits or blemishes
  • Best for: Making vanilla extract, baking, cooking
  • Price: More economical

What's the difference between Madagascar and Tahitian vanilla?

Madagascar Vanilla (Bourbon Vanilla):

  • Flavor: Rich, creamy, sweet, classic vanilla
  • Best for: Baking, ice cream, custards, general cooking
  • Most popular: 80% of world's vanilla

Tahitian Vanilla:

How many vanilla beans do I need?

General guideline:

  • 1 vanilla bean = 1 tablespoon vanilla extract
  • For ice cream: 1-2 beans per batch
  • For custard: 1 bean per 500ml milk/cream
  • For extract: 5-6 beans per 250ml alcohol

What are the white crystals on my vanilla beans?

These are vanillin crystals - a sign of HIGH QUALITY! They're natural flavor compounds that crystallize on the surface. This is a good thing, not mold. It means your beans are rich in vanillin (the main flavor compound in vanilla).

How should I store vanilla beans?

Best storage method:

  • ✅ Airtight container or vacuum-sealed bag
  • ✅ Cool, dark place (15-20°C ideal)
  • ✅ Away from direct sunlight and heat
  • ❌ NOT in the refrigerator (too cold and dry)

Australian climate tips:

  • Hot climates (QLD, NT, WA): Store in coolest part of pantry
  • Humid climates: Ensure container is completely airtight

  • Vodka or bourbon (at least 35% alcohol)

  1. Split vanilla beans lengthwise
  2. Place in dark glass bottle
  3. Cover completely with alcohol
  4. Shake weekly
  5. Ready in 2-3 months (better after 6+ months)
  6. Top up with more alcohol as you use it

How long does vanilla extract last?

How do I use vanilla beans?

Step-by-step:
